Execution Timeline

10 SEQUENTIAL TIMED STEPS

1DRY ROAST THE VERMICELLI
5 MIN

Add the vermicelli to a dry kadai over medium heat and roast, stirring constantly, until it turns a light golden brown and smells toasted. Set it aside on a plate.

Tip: Stir continuously — vermicelli goes from golden to burnt within seconds once it starts browning
2PREP THE VEGETABLES AND TEMPERING INGREDIENTS
8 MIN

While the vermicelli cools, finely chop the onion and coriander leaves, dice the carrot, and slit the green chilies so everything is ready before you start tempering.

3TEMPER THE SPICES
2 MIN

Heat the oil in the same kadai over medium heat, add the mustard seeds, and let them splutter, then add the urad dal and chana dal and fry until the dals turn light golden.

Tip: The dals should turn golden, not brown — they continue to darken slightly off the heat
4SAUTÉ THE AROMATICS
4 MIN

Add the curry leaves, green chilies, and chopped onion to the tempering and sauté until the onion turns soft and translucent.

5ADD THE VEGETABLES
3 MIN

Add the diced carrot and green peas to the kadai and sauté for a few minutes until they turn slightly tender but still retain some bite.

6BRING THE WATER TO A BOIL
3 MIN

Pour in the water, add the salt, and bring the mixture to a rolling boil over high heat.

7ADD THE ROASTED VERMICELLI
1 MIN

Lower the heat slightly and gradually sprinkle in the roasted vermicelli, stirring continuously so it does not clump together.

Tip: Adding it in a slow stream while stirring is what prevents lumps from forming
8COOK COVERED UNTIL THE WATER IS ABSORBED
5 MIN

Cover the kadai with a lid and let the vermicelli cook on low heat until it has absorbed all the water and turned soft.

Tip: Check once toward the end — if water still pools at the bottom, cover and cook a couple minutes longer
9LET IT REST OFF THE HEAT
2 MIN

Turn off the heat and let the upma sit covered for a couple of minutes so the residual steam finishes softening the vermicelli evenly.

10FLUFF AND GARNISH
2 MIN

Fluff the upma gently with a fork, squeeze in the lemon juice, and sprinkle the chopped coriander leaves over the top before serving.
